Today's Compliments of the Chef samples celeb-flavored Italian at Devito South Beach. Executitve chef Francis Casciato and pastry chef Antonio Bachour take us into the Ocean Drive kitchen co-owned by actor Danny Devito and sate our sweet tooth with vanilla bean panna cotta.
Vanilla Bean Panna Cotta (serves 9)Ingredients
- 2 gelatin Sheet
- 1 vanilla bean, split
- 1 ½ cups heavy cream
- ¼ cup sugar
- Stir vanilla, cream and sugar in heavy pot. Bring to a boil.
- Soften gelatin in cold water for about four minute. Drain gelatin sheet in a dry towel.
- Whisk gelatin sheet into hot cream until dissolved.
- Let mixture cool. Pour into prepared mold and refrigerate for four hours.
- Garnish with fruit berry compote.
Fresh Berry Compote (serves 9)
- ½ cup strawberries
- ½ cup raspberries
- ¾ cup blueberries/blackberries
- ½ cup sugar
- ¼ cup water
Combine all ingredients in a heavy pot. Bring to a simmer.
